Nashville Hot Mozzarella Sticks

Did you ever think you could be constipated and have diarrhea all at the same time?

After constructing the masterpiece of a recipe that was Nashville Hot Fried Pickles the only right thing to do was apply that process to fuckin’ mozzarella sticks. I actually have a short list of things I now want to be Nashville Hot’d but we’ll just let that be my little secret. This recipe pretty much follows the same exact recipe as the Nashville Hot Fried Pickles – only thing I really changed was the heat level and frying process. We’ll start with the Nashville Hot spice again:

4 tbsp Cayenne Pepper
2 tbsp Paprika
1 tbsp Garlic Powder
1 tbsp Mustard Powder
1 tbsp Black Pepper
1 tbsp Onion Powder
1 tbsp MSG
1 tbsp Brown Sugar

Unlike the fried pickles, I didn’t season the mozzarella sticks with the seasoning. I went with a flour, buttermilk, flour, freeze & fry method. Make sure you freeze the battered cheese sticks for at LEAST 30 minutes.

2 Cups Buttermilk
2 tsp Hot Sauce
3 Eggs
1 tbsp Nashville Hot Spice
2 tbsp cayenne

Hot Oil:
1/2 Cup Canola Oil
1 tsp Brown Sugar
1 tbsp Nashville Hot Spice Blend
1 tbsp Hot Sauce
1 tbsp cayenne

Flour Blend:
2 Cups Flour
2 tsp Salt
2 tsp Black Pepper
1 tsp Paprika
4 tbsp Cayenne
2 tbsp Nashville Hot Spice Blend

Before you start flouring the cheese sticks, drizzle a little bit of the buttermilk over the flour. Flour the cheese sticks and shake off any excess flour. Dip them in the buttermilk mixture and shake off any excess. Drop them back into the flour and make sure they are coated extremely fucking well. Place on a parchment paper lined baking sheet and freeze for 30 minutes.
**Pro tip: work with 1 cheese stick at a time
All thats left to do is fry, oil and season these cunts. Fry in 350° oil for 50-60 seconds. Keep a close eye on the mozzarella sticks to avoid a fuckin’ blowout. Remove the mozzarella sticks from the oil, place on a wire rack, brush with the hot oil and hit them with a little bit of seasoning.
